Bring some Christmas flavour to January


A creamy, slightly salty goat’s cheese ice cream with Christmas-flavoured cranberry sauce is a wonderful combination that probably melts the hearts of those who don’t usually like cakes very much. 

Despite the iciness of the cake, it fits a Christmas table perfectly. If you wish, you can also prepare it without the crust, simply a goat’s cheese and cranberry ice cream. In any way, it is a good way to bring some Christmas flavour to January. For 6-8 persons. 

What's needed?

Crust: 

100 g dates 
100 g hazelnuts 
1-2 tbsp coconut oil  

Goat’s cheese ice cream: 

2 dl 35% cream 
150 g goat’s cream cheese 
100 g regular cream cheese 
2-3 tbsp DanSukker unrefined cane sugar 
Vanilla seeds scraped from 1 pod  

Cranberry sauce: 

200g cranberries 
1 dl DanSukker jam sugar 
1/2-1 tsp cardamon 
1-2 star anise  
pistachios, chopped

How to prepare?  

For the cranberry sauce, boil the cranberries with jam sugar, cardamon, and star anise for about 15-20 minutes. Cool down.  Make the crust. Use a food processor to combine the nuts and dates into an even mass. Add melted coconut oil and stir everything through. Line a cake tin or other suitable container with cling film and press the crust into it.  For the goat’s cheese ice cream, whip the cream with room temperature goat’s cream cheese and regular cream cheese, sugar, and vanilla seeds into a creamy foam. Pour half the goat’s cheese cream into the cake tin. Pour half the cranberry sauce on top of it. On top of the sauce, pour the rest of the goat’s cheese cream, and cranberry sauce on top of that once more. Mix the top layers a bit with a spoon. Place in the freezer for at least 5 hours up to overnight. Before serving, take the icy cake out to room temperature for a bit so that it would melt slightly and get creamy. Sprinkle chopped pistachios on top when serving.

Igatahes sobib ideaalselt see ideaalselt ka neile, kes soovivad veel jaanuaris jõulumaitsed. Väärib märkimist, et soovi korral võid selle valmistada ka ilma koogipõhjata ja lihtsalt kitsejuustu-jõhvika jäätisena. Koogist jagub 6-8-le maiasmokale.


Mida sa vajad?

Tordipõhi: 

100 g datleid 
100 g sarapuupähkleid 
1-2 sl kookosõli 

Kitsejuustujäätis: 

2 dl 35%-list koort 
150 g kitsepiimast toorjuustu 
100 g toorjuustu 
2-3 sl DanSukkeri rafineerimata 
roosuhkrut 
1 vanillikauna seest kraabitud seemned 

Jõhvikakaste: 

200 g jõhvikaid 
1 dl DanSukkeri moosisuhkrut 
1/2-1 tl kardemoni 
1-2 tähtaniisi 
pistaatsiapähkleid, hakituna.

Kuidas valmistada?

Jõhvikakastme jaoks keeda jõhvikaid koos moosisuhkru, kardemoni ja tähtaniisiga ca 15-20 minutit. Jahuta. Valmista koogipõhi. Selleks töötle köögikombainis pähklid ja datlid ühtlaseks massiks. Lisa sulatatud kookosõli ja sega kõik läbi. Vooderda keeksivormi või muu sobiliku nõu kilega ja suru sinna põhjale koogipõhi. Kitsejuustujäätise jaoks vahusta koor koos toasooja kitsepiimast- ja tavalise toorjuustuga, suhkru ja vanilliseemnetega kreemjaks vahuks. Kalla pool kitsejuustukreemist koogipõhjale. Sinna peale kalla pool jõhvikakastmest. Jõhvikakastmele kalla jälle kitsejuustukreem ning kõige peale taas jõhvikakaste. Tõmba lusikaga pealmine kiht paari liigutusega veidi segamini. Aseta sügavkülma vähemalt 5 tunniks kuni üle ööl. Enne serveerimist tõsta jäine kook veidi aega enne serveerimist toatemperatuurile, et ta veidi sulaks ja muutuks kreemjamaks. Puista serveerides peale hakitud pistaatsiapähkleid.
