Brownie with chai and grape seed flour


This brownie is made exciting by the grape seed flour that's used instead of the regular wheat flour. In addition to that, a rich extra flavour is given by chai powder with warm spices. Grape seed flour is a new exciting innovation in the world of flours, special for it's high anti-oxidant content, richness in fibre and of course the fact that it's gluten free. 

All the characteristics of flour remain even after heat processing. It's definitely worth trying. It has a slightly bitter and sour berryish flavour.  Who doesn't have grape seed flour or chai at hand, can use almond flour, buckwheat flour or simple whole grain flour. If you leave chai powder out, you should add a little more sugar. In reality it's simple and a simple brownie to make for all cake lovers.

What's needed?  

100 g butter 
100 g dark, at least 70% cocoa content chocolate 
1 dl muscovado sugar (e.g. Billington's) 
3 tbsp chai tea power (for example this David Rio Tiger Spice Chai) 
2 eggs 
4-5 tbsp grape seed flour (or other gluten free flour, or a combination of 2 tbsp of one and 2 tbsp of another flour) 
A pinch of salt 
3 sl chai tee pulbrit (nt SEE David Rio Tiger Spice Chai)
For the topping: 100 g dark chocolate, summer berries or fruit   

How to prepare? 

Melt the butter and chopped dark chocolate in a pan. Let the chocolate melt at low heat. Add a little salt, chai powder, and sugar. Stir through. Add eggs one by one and mix into an even mass. Finally add the grape seed flour and stir through properly. Pour into a smaller (10x15 cm) oven dish covered in baking paper as an even layer. Bake at 160-170 degrees for about 30-40 minutes. Cool down. Spread summer berries on top. Melt the dark chocolate in a water bath and drizzle on the berries. Cover with sugar dust if you wish. Eat warm or cold and serve with vanilla ice cream, for example.

Selle brownie muudab põnevaks viinamarjaseemnejahu, mida tavalise nisujahu asemel siin küpsetises sai kasutatud. Lisaks sellele annab külluslikku lisamaitset veel soojade vürtsidega chai tee pulber. Viinamarjaseemnejahu on põnev uuendus jahude maailmas ning eripäraks on selle jahu suur antioksüdantide sisaldus, kiudainerikkus ning loomulikult gluteenivabadus. Kõik jahu head omadused säilivad ka peale kuumutamist. Tasub kindlasti katsetada. Maitselt on jahu veidi mõrkjas ja hapukas, kergelt marjane.

Kellel parasjagu viinamarjaseemnejahu või chaid käepärast ei ole, võib kasutada jahu asendajana näiteks mandlijahu, tatrajahu või ka tavalist täisterajahu. Chai ärajäämise puhul tuleks veidi suhkru kogust suurendada. Tegelikult on see lihtne ja kõigile koogisõpradele igati jõukohase valmistuskäiguga brownie. 
Mida sa vajad?

100 g võid 

100 g tumedat, vähemalt 70%-lise kakaosisaldusega šokolaadi 
1 dl tumedat muscovado suhkrut (nt Billington´s) 
3 sl chai tee pulbrit (nt SEE David Rio Tiger Spice Chai) 
2 muna 
4-5 sl viinamarjaseemnejahu (või muud gluteenivaba jahu või siis kombineerituna nt 2 sl üht ja 2 sl teist jahu) 
näpuotsaga soola 
Katte jaoks: 100 g tumedat šokolaadi suviseid marju või puuvilju

Kuidas valmistada?

Sulata kastrulis või koos hakitud tumeda šokolaadiga. Lase vaiksel tulel šokolaadil sulada. Lisa veidi soola, chai pulber ja suhkur. Sega läbi. Lisa ükshaaval munad ning sega ühtlaseks. Viimasena lisa viinamarjaseemnejahu. Sega korralikult läbi. Kalla küpsetuspaberiga määritud väiksema (nt 10x15 cm) ahjuvormi põhjale ühtlase kihina. Küpseta 160-170 kraadi juures umbes 30-40 minutit. Jahuta. Laota peale suvemarjad. Sulata kastrulis vesivannis tume šokolaad ning nirista marjadele. Soovi korral raputa peale veel tuhksuhkrut. Söö ka soojalt või külmalt ning juurde sobib hästi vanillijäätis.
