Easy Carrot Cake


When something baked has carrot in it, I'm sold! One time I swapped squash in a squash cake with one part carrot, and it seemed to me that the cake was even tastier. Thus, whenever I find a new recipe where the crown is carrot, I test it straight away. When I found this recipe on the blog "Ise tehtud, hästi tehtud" for the carrot cake with buckwheat flour, walnuts, and white chocolate, it instantly became the whole family's favourite. Today I'm sharing this recipe.

Tuuli Mathisen writes as follows: "Tasty, nutty, and juicy cake that nicely suits those who are battling gluten intolerance. Carrot makes the cake juicy and the nutty flavour of buckwheat goes well with the mellow juiciness of the carrot, and the walnuts. This cake can sport a rich white chocolate cream cheese hat on top as well."


What's needed?  

200g carrot, peeled and finely grated 
150g butter 
2dl sugar (prefer unrefined brown sugar) 
3 eggs 
3dl buckwheat flour (prefer flour made of raw buckwheat, you can find it in nature- and ecological shops) 
1tsp baking powder 
0,5tsp salt 
100g walnuts, chopped grated lemon zest  

Glaze: 

100g white chocolate 
100g cream cheese at room temperature 
walnuts for decoration


How to prepare?  

Melt the butter. Separate egg yolks and whites. Mix the yolks into an even mass with the sugar, add melted butter and grated carrots. Add lemon zest. Mix together flour, baking powder, walnuts, and salt and add them to the butter-yolk mass. Whisk the egg whites into a thick foam and mix into the batter. Pour the batter into a cake tin smeared with butter and cook at 180 degrees for about 35-40 minutes. Check the cooking level with a match. Take the cake out and let it cool. For the glaze, melt the chopped white chocolate in a water bath, and add cream cheese. Stir well and spread onto the cake. Decorate with whole walnuts.

Kui mõnes küpsetises on peidus porgand, siis olen mina müüdud! Kunagi vahetasin ühe osa kabatšokki koogis ära porgandiga ja mulle tundus, et see see sai veelgi maitsvam. Seega, kui leian mõne uue retsepti, kus kuningaks on porgand, testin seda retsepti kohe. Kui leidsin blogist "Ise tehtud, hästi tehtud" porgandikeeksi tatrajahu, kreeka pähklitega ja valge šokolaadiga, sai sellest kohe meie pere lemmik. Täna jagan just seda retsepti.

Tuuli Mathisen kirjutab nii: "Maitsev, pähkline ja mahlane keeks, mis sobib hästi ka neile, kes gluteenitalumatusega maadlevad. Porgand annab keeksile mahlase olemise ja tatra pähkline maitse sobitub porgandi maheda mahlasuse ning Kreeka pähkliga imehästi. Krooniks võib keeksile peale sättida rikkaliku valge šokolaadi ja toorjuustumütsi."



Mida sa vajad?


200 g porgandit, koorituna ja peenelt riivituna
150 g võid
2 dl suhkrut (eelista rafineerimata pruuni suhkrut)
3 muna
3 dl tatrajahu (eelista toortatrast valmistatud jahu, mida leiad loodus- ja ökopoodidest)
1 tl küpsetuspulbrit
0,5 tl soola
100 g
Kreeka pähkleid, hakituna
Riivitud sidrunikoort

Glasuur:

100 g valget šokolaadi
100 g toorjuustu toasoojana 
Kreeka pähkleid kaunistamiseks

Kuidas valmistada?

Sulata või. Eralda munakollased  ja –valged. Sega munakollased suhkruga ühtlaseks ja lisa siis sulatatud või ning riivitud porgand. Lisa riivitud sidrunikoor. Sega omavahel jahu, küpsetuspulber, Kreeka pähklid ja sool ning lisa need või-munakollase massile. Vahusta munavalged tugevaks vahuks ja sega taina hulka. Kalla tainas võiga määritud keeksivormi ning küpseta 180 kraadi juures umbes 35-40 minutit. Küpsust kontrolli tikuga. Võta keeks välja ja jahuta (soovitavalt restil). Glasuuri jaoks sulata vesivannil hakitud valge šokolaad ja lisa siis toorjuust. Sega läbi ning laota keeksile. Kaunista tervete Kreeka pähklitega.

One coat. Three ways. Third look.


The finale of this "Three Ways" series is a revel of accessories. When I got the yellow adidas supercolor shoes for my birthday, I admired them so much that I put them on a shelf in the living room where they stayed until this series. Yellow colour in the spring is a real thirst quencher, vitamin bomb, and a prophecy of sun shining endlessly soon (well, if you're lucky).

This time I mixed Pohjanheimo Couture's spring limited edition coat with light casual clothing. It's the kind of coat that you can cheekily wear with a smart T-shirt and trousers. For me this coat is ingenious, because it goes with everything. You can add endless accessories to it or leave it without details to boldly dazzle on its own. This favourite colour of Coco Chanel's masterpiece does not need a gala for grand entrance, you don't need to wait for a show to elegantly enter the theater nor a big birthday to decorate yourself with a special coat. In this coat, the party starts already in the morning. It's a party within you. And when I'm completely honest, I don't know a better party than that. Seekordsele "Three Ways" pildisarjale paneb punkti värviliste aksessuaaride pillerkaar. Kui sain sünnipäevaks kollased adidas supercolor jalanõud, imetlesin neid sedavõrd, et asetasin nad elutoa riiulisse, kuhu nad jäid kuniks selle pildiseeriani. Kollane värv on kevadel justkui pilgupaitaja, vitamiinipomm ja ennustus sellest, et õige pea hakkab päike lakkamatult paistma (noh ... kui hästi läheb).

Sel korral miksisin Pohjanheimo Couture kevadise limited edition heleda mantli kerge casual riietusega. Minu jaoks on see täpselt selline, mida on kelmikas kanda ka kavala T-särgi ja pükstega. Geniaalne mantel, sest ta sobib absoluutselt kõigega. Sellele võib lisada lõputult aksessuaare või jätta ta ilma detailideta uhkesse üksindusse oma lugu rääkima. See Coco Chaneli lemmikvärvi mantel ei vaja galat, kuhu suursuguselt siseneda, selle omamiseks ei pea ootama ooperit, et väärikalt teatrimajja astuda ega juubelit, mil ennast eriliste riietega ehtida. Seda mantlit kandes algab pidu juba hommikul, kui kodust lahkud. See on pidu sinus eneses. Ja kui nüüd üdini aus olla, siis ma ei tea ühtki paremat pidu. One coat. Three ways. Second look.


I've got an image left forever in my mind of Queen Elizabeth II walking briskly in her domain in Balmoral (here). It's year 1967. She is wearing a scarf on the head, a skirt suit, and Hunters. Queen Elizabeth II has become extremely likable for me. She is definitely role model on how to survive big and small storms, and stand steadfast for her kingdom.

Thinking about the Queen, her hair that hasn't changed for decades, her nicely colourful and dignified skirt suits, and of course hats come to mind. When the Queen rests and spends time at her estate, she often wears a scarf on her head. The second look in Pohjanheimo Couture's coat was shot thinking of Queen Elizabeth II - the much loved golden Hunters and long golden gloves were added to the mix. This polka dot scarf is the cherry on top, in my opinion. And finally, the brooch. When I opened the jewellery box, it whispered to me: "I fit the best to decorate a pocket!" All that was left for me was to agree with my vintage brooch, because she's lived longer than me, and one arguing with people senior to you would be a sin. Mulle on igavesti sööbinud mällu kaader, kus kuninganna Elizabeth II kõnnib hoogsalt oma valdustes Balmoralis (pildi leiad siit). Aasta on 1967. Tal on rätik peas, seljas kostüüm ja jalas Hunterid. Kuninganna Elizabeth II on paljude dokfilmide ja elulooraamatute tulemusel saanud minu jaoks erakordselt sümpaatseks. Ta on kahtlemata täiuslik eeskuju, kuidas elada üle nii suuri  kui ka väikseid torme, mis elul varuks on, ning seista vankumatult oma kuningriigi eest.

Mõeldes kuningannale, seostub mulle kohe tema aastakümneid muutumatuna püsinud soeng, vahvate värvidega ja väärikate lõigetega kostüümid ning loomulikult kübarad. Kui kuninganna aga puhkab ja Balmoralis aega veedab, kannab ta sageli peas rätikut. Just kuninganna Elizabethile mõeldes pildistasime teist looki Pohjanheimo Couture mantlis, kuhu lisasin oma palavalt armastatud kuldsed Hunterid ja pikad kuldsed kindad. See täpiline Pohjanheimo rätik on minu arvates täpp i-peal. Ja lõpuks pross. Kui avasin ehetekarbi, sosistas ta mulle: "Mina sobin kõige paremini taskut kaunistama!" Mul ei jäänud muud üle, kui oma vintage prossiga nõustuda, sest ta on elanud kauem kui mina ja endast vanematele teadupärast vastu ei vaielda. Kuidas sulle meeldib "Three ways" teine look? Instagram Inspiration - Eat dessert first


Warning! This is not a post to be read on an empty stomach or when you're experiencing an intense sweet tooth. I would recommend a cup of hot cocoa or tea, and cookies with this post. And why not macaroons or cake? Sugarruffles belongs to cake masters who constantly share their spectacles in the blog as well as on Instagram. An account I particularly love, belongs to Nadia Colella, for whom baking is something more - she believes it's art and she is devoted to French pastries. Iambaker account belongs to Amanda Rettke - a housewife and a mother of five children who has published many recipe books. The most famous one of them is"Surprise-Inside Cakes". So. One coat. Three ways. First look.


Take a guess - what colour is this? It's not white, it's not cream, it's not beige. You guessed right! It's called Chanel's LightGoldenRodYellow that perfectly fits every woman. It's one of the favourite colours of the legendary fashion designer Coco Chanel. No wonder, because it's a shade that suits blondes as well as brunettes, and almost magically betters a woman's complexion. This week's "Three Ways" section features the Estonian designer Pohjanheimo Couture's limited edition light spring coat which I will wear in three posts.

I bet Jacqueline Kennedy would have liked it. When I looked around Pohjanheimo's studio, I felt the elegant air of the 60s. When I mentioned it to Ülle Pohjanheimo, she said that her things always carry a bit of 60s' scent, because that was a period when clothes weren't made for one season only. The coat seen through the three posts is minimal, multifunctional, and belongs to the chapter of modern classics. It's made of light cashmere which is exceptionally warm against the skin thanks to the silk lining, and on the windy day we shot this series, the wind didn't bother me the slightest. When I combined the first outfit, I thought of my mother - if she still went to work, she would do it like that. She still chooses high heels and vintage bags. I myself love casual dresses that I can put a broad patent belt on and that has pockets. Speaking of pockets - this Pohjanheimo coat has enough of them - both the big pockets that can't be looked past, as well as the clever side pockets behind them. This is the first look to start the week with. When walking through a blue Monday, better do it on high heels!

Mõista, mõista, mis värv see on? See ei ole valge, see ei ole kreemikas, see ei ole beež. Õigesti arvasid! Seda kutsutakse Chaneli kollakas-halliks värviks (LightGoldenRodYellow), mis sobib perfektselt igale naisele. See on legendaarse moelooja Coco Chaneli üks lemmikvärve. Pole ka ime, sest see on toon, mis sobib nii blondile kui ka brünetile ja parandab justkui imekombel naise jumet. Sel nädalal on rubriigis "Three Ways" luubi all Eesti moelooja Pohjanheimo Couture`i kevadine limited edition hele mantel, mida kannan läbi kolme postituse.

Vean kihla, et see mantel oleks meeldinud Ameerika legendaarsele esileedile ja moeikoonile Jacqueline Kennedyle. Kui ma Pohjanheimo stuudios ringi vaatasin, tundsin õhus 60ndate elegantset meeleolu. Kui seda Ülle Pohjanheimole mainisin, ütles ta, et tema asjades on alati veidi 60ndate hõngu sest see oli periood, kui riideid ei valmistatud vaid üheks hooajaks. Mantel, mida näed läbi kolme postituse, on minimalistlik, multifunktsionaalne ja kuulub modernse klassika peatükki. See on valmistatud heledast kašmiirist, mis on naha vastas iseäranis soe siidist voodri tõttu ja sellel tuulisel päeval, mil me pildistasime, ei häirinud tuul mind sootuks. Esimest outfiti kokku pannes mõtlesin oma armsale emakesele - kui ta veel tööl käiks, siis kindlasti just nii. Tema valik on veel praegugi kõrged kontsad ja vintage käekotid. Ma ise jumaldan argiseid kleite, millele saan laia lakkvöö peale tõmmata ja kus on taskud. Rääkides taskutest, siis just sellel Pohjanheimo mantlil on neid piisavalt - nii need suured taskud, millest on võimatu mööda vaadata kui ka nende taga olevad nutikad küljetaskud. Three Little Pics: Cashmere Cat


Writing various stories in Stellarium almost every day, I constantly have new sections in mind that I would first and foremost enjoy doing and that would also interest the readers. Stellarium's newest section "Three Ways" shows how to wear one garment three different ways. A lot of women complain that despite a large wardrobe they still don't have anything to wear. It's a worry that can be solved so that before you buy the next dress, shirt, or pair of trousers, you should mentally scan your existing clothes and think about what the newcomer could suit with.

Ever since I started thinking through my purchases, I've left many things in the shop instead.  Our first "Three Ways" series of posts was devoted on a light blue dress. This week you'll find the Estonian fashion designer Ülle Pohjanheimo's LightGoldenRodYellow cashmere coat in "Three Ways" that I will wear through three photo series. Thinking about this Pohjanheimo Couture coat, a white canvas where you can paint anything, came to mind. You'll see the clothes and details that I wore the coat with already next week. Kirjutades pea iga päev Stellariumisse erinevaid lugusid, mõlguvad pidevalt mõtteis uued rubriigid, mida oleks endal nauding teha ja mis pakuksid lugejatele samaväärset huvi. Stellariumi uusim rubriik "Three Ways" tutvustab, kuidas üht ja sama riideesest kolmel erineval viisil kanda. Paljud naised kurdavad, et hoolimata suurest garderoobist, napib ikka asju, mida selga panna. See on mure, mida saab lahendada nii, et enne järgmise kleidi, pluusi või püksipaari ostmist lased silme eest läbi oma eelneva garderoobi ja mõtled, millega sinu uustulnuk võiks sobida. Sellest ajast, kui hakkasin oma oste läbi mõtlema, on mitmed asjad hoopis poodi jäänud. 

Kui meie esimene "Three Ways" postituste sari pühendus helesinisele kleidile, siis sel nädalal leiad rubriigist Eesti moelooja Ülle Pohjanheimo kašmiirmantli, mida kannan läbi kolme pildiseeria.
